Although gefilte fish may be prepared with bread crumbs or matza flour, their purpose is just to hold the ground fish and other ingredients together. Thus, only a Shehakol need be said. (See also Shulchan Aruch, Orach Chaim 208b, and Mishnah Berurah 208:8).
